Lambert - St. Louis International Airport will soon have some additional restaurants and a wine bar for travelers to enjoy during connections, flight delays, layovers or while otherwise waiting for a flight. The new offerings will be Mosaics Tapas Fusion, The Pasta House Co, Brioche Dorée and Fitz's Root Beer. Also, coming in early 2009 will be the Missouri Wine Bar which is another welcome addition to the every growing opportunities to sample local and regional wines while at the airport.
HMSHOST DELIVERS LOCAL BRANDS TO LAMBERT-ST. LOUIS INTERNATIONAL AIRPORT TRAVELERS
BETHESDA, MD (July 15, 2008) – New local restaurant brands are on their way to Lambert-St. Louis International Airport. HMSHost Corporation, a world leader in travel venue dining and shopping, and its joint venture partners D&D Concessions LLC, will bring Mosaics Tapas Fusion, The Pasta House Co, and Fitz’s Root Beer as part of a lease extension award to provide food and beverage concessions at the airport through 2020. During the remaining 12-year contract, the company will spend nearly $16 million to introduce more local and upscale dining venues as part of the airport’s initiative to improve the passenger experience. Currently under construction are The Pasta House Co., scheduled to open this fall, and Missouri Wine Bar and Brioche Dorée Café, opening by early 2009. Other new locations will begin construction and open throughout 2009 and early 2010.
“By extending our relationship with HMSHost, we are giving travelers more choices and a more authentic St. Louis dining experience at the airport,” said Lambert-St. Louis International Airport Director Richard Hrabko. “Restaurants such as Mosaics Tapas Fusion are redefining St. Louis cuisine and now they will help redefine our concession program.”

Mosaics Tapas Fusion: Named as one of the “Best 10 Restaurants in St. Louis" in 2005 by St. Louis Magazine, Mosaics Tapas Fusion’s popular modern fusion cuisine will be a welcome addition to
Concourse A. Passengers will enjoy local celebrity Chef Claus Schmitz’s tapas and fusion style foods including the Tuna Tartar, Mosaic Pot Stickers and North African Style Hummus.
The Pasta House Co: Offering an enticing menu of more than 25 pasta varieties and 15 specialty chicken, beef, and seafood entrées, The Pasta House Co. is a combination of good tasting Italian and authentic “old country” flavor. Airport visitors will select from a variety of signature dishes including the famous 12-layer Lasagna Al Forno and the house Special Salad of iceberg and romaine lettuces, artichokes, pimentos and Parmesan cheese. Located in the Main Terminal, an assortment of appetizers, sandwiches and desserts also will be offered, along with a selection of wines and cocktails.
Fitz’s Root Beer: Opening in the Concourse C and D food court, Fitz’s Root Beer has been the root beer of choice among St. Louisans since 1947. Several kinds of burgers, an assortment of appetizers, salads and entrées will accompany the root beer selection. The restaurant also will offer desserts including Fitz’s Neapolitan brownie.
Missouri Wine Bar: Opening in the Main Terminal, Missouri Wine Bar will offer travelers the luxury of wine tasting at the airport. Local boutique vineyards and award-winning varietals will anchor the selection of tastings by the glass. Designed to complement the featured wines, the menu will include artisanal breads and salads of fresh greens, nuts, cheeses, olives and fruits. For those with an appetite, Missouri Wine Bar also will serve food from nearby Brioche Dorée Café.
Brioche Dorée: Upscale, quick and casual, offering travelers affordable and authentic café food. With two airport locations—Concourse A as well as the Main Terminal, Brioche Dorée is set in a country French atmosphere that captivates customers with the authentic fresh aromas of bread and pastry baking. Guests will enjoy an array of hand made sandwiches, healthy garden salads, artisan breads, gourmet pastries and custom roasted coffees.
Baja Fresh: Award-winning and cutting-edge, Baja Fresh is a Mexican restaurant that uses only the freshest ingredients to create exceptional burritos, fajitas, tacos, salads and quesadillas. Fire-grilled meats, homemade salsas and handmade tortillas set it apart from ordinary fast food. For lunch or dinner, travelers will enjoy the restaurant’s famous “build your own burritos” – hot, grilled flour tortillas filled with a choice of freshly prepared steak, pork, chicken or vegetables served with rice, beans and guacamole. Baja Fresh will open in the food court at the entrance to Concourse C and D.
